Tony refinished this gorgeous cabinet for me. I got the theory (and color!) from Pinterest and we found out the cabinet at a resale shop for only $35 dollars! Smashed Avocado, Roasted Bell Pepper & Pepper Jack Quesadillas
4 oz pepper jack cheese, thinly sliced
1 teaspoon essential olive oil
1/2 yellow onion, thinly sliced
1/2 avocado, mashed
Line a baking sheet with foil. Toss bell peppers and onions in essential olive oil and season with salt and pepper. Place under broiler for 10-15 mins until peppers and onions begin to char. Alternatively it is possible to saute them with a small amount of oil inside a medium skillet.
Apply skillet or griddle generously with nonstick cooking squirt and place over medium heat. Lay down tortilla in the skillet. Add pepper jack slices on the bottom, then peppers and onions.
